Manzanilla is similar to Fino Sherry. It is very pale, very dry and has a distinctive nutty, salty flavour. Manzanilla is produced in Sanlucar on the Andalucian coast and because of its particular climatic conditions, Flor - the all-important Sherry yeast, is formed on the maturing wines all year round.
This is a great example of Manzanilla and should be drunk young, chilled and as an accompaniment to nuts or simple tapas. |
